Victoria Scones. Could not find any Sultanas, only mixed Fruit, and Currents. Found a few Cherries, so used them instead.

I have some Bramley apples, will have to make a Bramley apple cake. We have not had one for years and they are yummy!

The apple cake recipe I have was given to me by a friend. When it came to following her recipe, she said that the mixture may be a little stiff/dry, so, as I had a small banana with brown-spotted skin, I decided to add it to the cake. My goodness - it was lovely! Glad I tried the recipe. Yum!

Made a cake yesterday, and this was the basis: www.taste.com.au/recipes/cherry-sultana-cake/1d412d60-639a-4da1-9264-3cfe46a652e2However, the fruit was right for what I wanted, but it looked a little dense for my liking, so instead of mostly plain flour with a little bit of self-raising, I made it all self-raising. Then, the recipe said to cook the butter, sugar, cognac, and fruit for five minutes...I didn't want to wait that long (cooling time of 45 mins - !!), so I warmed it enough to melt the butter, and then added a cupful of wholemeal flour to absorb some of the cognac. I also added another 50% of everything as I wanted a round cake (mine was 9"), not a loaf tin shape. All in all, there wasn't much of the recipe left !! (Same-ish ingredients, but in different proportions!) Turned out gorgeous - so glad I tried it, but then I must say I do like a lot of the "taste.au" recipes - perhaps I should've been Australian!

Good morning all, Tina, I think you would've loved this cake - when it was warm, it had the aroma which meant you had to eat it(!), and the top had the crunchiness to it. Mmm. Now cold, I can slice it easily, without crumbling, and it is so fruity. Gorgeous - I'll be making that again.

A mincemeat and orange Bakewell(ish) tart - pastry base spread with my homemade mincemeat and luxury candied orange peel (bought in Lidl, super cheap), topped with Victoria sponge with orange extract in it. With the leftover pastry I made a large cheddar, bacon and blue cheese pasty for tomorrow's lunch.
