Why should it be cheating, if it helps you, Iris, Ihave had a top of the Range Breadmaker, but got fed up trying to get the Rotor, or whatever it was called, out of the bottom, and simply like the Hands on Method, used to be all by Hand, but use my Dough Hooks on my Hand Mixer, no Problem!

I made the snow cake from Christina's Cucina blog. Oh it is wonderful - I used my homemade plum jam, thickly spread, and I added some vanilla paste in the cake mix. www.christinascucina.com/snow-cake-recipe-from-scotland/ This is now a go-to tray bake, just like lemon drizzle tray bake (Mary Berry). I shall definitely make it again. Yum.

This sounds delicious, Val, could you add it to the Recipes Section? Will definitely make it when I can get hold of some Coconut. The reason it was always Raspberry Jam, is because Scotland is the home of the best Raspberries in the World, and not that far from Blairgowrie, every School Holiday, I used to go Raspberry picking with the Boys. If it was nearer home, they went on their own, and were told to fill their Lunch Boxes with Berries, so we have always had Raspberry Jam. Now have a Row, of very productive Berries, between my Fence, and my Neighbours.

Tina, that recipe for Snow Cake is quite lengthy, so it would be a lot easier just to click on the link, I think.

Ha ha Aly, these tins seem to make a habit of getting emptied! I saw a lovely lemon loaf in the Sunday Times and as I have just had some large lemons delivered, I may be tempted to make it! It's one of those where you beat the eggs and sugar together till pale, then adding melted butter and double cream, before finally the flour with lemon zest. After cooking it has the lemon drizzle-type topping - and then, icing! Definitely will try that - it looks really more-ish.

Want to make some Almond Biscuits, depends how much Time I spend in the Garden, awa the noo! Have to be in by two, as youngest Son phones every Day, so am scooting out, might pick Peas, to go with Fish, keep telling SIL to grow his own, he pinches mine, too handy for him, can't see them from the Kitchen Window.

This afternoon I have baked a triple lemon cake - I should say I've cooked the three lemon sponges and put them in the freezer. I also made a batch of lemon curd. This will be used as filling with some butter cream. I'll drizzle a little lemon syrup on the sponges before sandwiching them together and decorating the top as OH's belated birthday cake. It's an embellished lemon drizzle cake when all is said and done but the family all love that so should go down well when they are all here.
