Yesterday I made a chocolate layer cake. The family were arriving and we were off out to late lunch at our local carvery, and not having been there before I thought it'd be good to have cake available when we returned home to enjoy with a cuppa. When son arrived he had made a raspberry Bakewell cake, using fresh (or frozen - not sure) raspberries; then daughter had brought a birthday cake. We were caked-out!! Gifts and flowers, too. a wonderful afternoon with the family. For the chocolate cake, I made the butter icing filling, and I added a melted bar of salted caramel chocolate into it. Son and daughter both requested a large portion to take home, and the Bakewell too. That's good, of course, it saved us having to eat the mountain of cake!!

Agree, cake heaven ! Trouble is, it plays havoc with any diet. I'm not on any diet, as such, but try as much as possible to keep down the volume - smaller plate, etc. Yesterday I blew it. Now i'm paying for it... x

As long as you're happy, does it matter - probably not! I know that over Christmas I found it difficult to do up my trousers, etc., so I just cut back again until I'm more comfortable, otherwise just normal meals.

Our son made a Bakewell cake with raspberries recently, and it was really delicious. I thought I'd try it (he gave me the recipe link). The only fruit I had was fresh blueberries, so I used them - oh so good. So easy too, worth a try.

Bread is in the machine. Still a chocolate cake in the tin so no more needed until P is back!

Like you, Aly, we still have cake in the tin. It is a cherry, almond and coconut cake - I make it with brown sugar for a toffee-type flavour, although the recipe asks for caster sugar. It's because at one point some brown sugar is mixed with ground almonds, so there are 'pockets' of the toffee flavour.

While in France, I bought some small Malteser-shaped chocolates (Lindt) with a fruit-flavoured jelly in the middle. This morning I thought I'd make some fairy cakes and drop one of these chocolates into the middle of each cake. We'll see how it goes! I'm going to daughter's house, so I'll leave some for them.

I made this ginger cake, and it's really good. I didn't put the icing on it, as we like it as is. It appeared as if the centre wasn't cooked, although it was just a little more moist than the rest. However, the recipe suggested a 7" tin - I used an 8", but I reckon it would cook more evenly in a 9" tin. I recommend this one. In the recipe is 85g drained stem ginger, grated. I had a half bottle of ginger sauce (with bits) so that is what I used instead. Delicious and very more-ish.

I like the sound of your cake, Val. Ginger is my favourite flavour. Might have to try this recipe but will save link for another day.

Tina, it is still delicious today - I understand the black treacle element keeps it like sticky gingerbread!
