My upside-down pear cake, using four large-ish Conference pears:
8" tin, lined; oven 180 deg.
100gms brown sugar 60 gms butter sprinkle of cinnamon
Add together in a saucepan, bring to the boil. Then pour toffee mixture into the lined tin, ensuring the whole base is covered.
Prepare the pears, slicing them and laying on the toffee mixture in a pretty pattern if you wish!
60 gms brown sugar 60 gms soft butter Cream them together (1 large egg - mine weighed 60 gms, which is why the butter and sugar weighed the same) Add the egg, whisk again till well mixed
Then I added 80 gms of SR flour with half a teaspoon of baking powder, and a tablespoonful of milk Mix together, then spoon the mixture over the pears, spreading to cover all the pears.
Bake. Let it cool a little, then upturn on to a plate, and sprinkle some icing sugar over the top, if wished.

Bet it is delicious Val, bit too much work for me, but is pushing me to make a Pineapple Upside down Cake, which I love. x

Tina, I thought this upside down cake was easy - the difference I think with your pineapple one is that there's no peeling of fruit, but honestly this was one of the easiest I've made! I suppose the caramel was the only extra bit, but that was easy too. Do you put the glace cherry in the middle of your pineapple rings? I always thought that was such a pretty addition! When I make the pineapple one, I usually line the bottom of the dish with golden syrup. Oh my, my mouth is watering just thinking about it !

Val, I butter the Base of my my Tin generously with Butter, then add soft Brown Sugar, again, not Knee deep, place your Rings in Situ, with a Cherry in each middle, then cover with an ordinary Sponge Mix, and bake at 350, for 35 Mins. I also used some of the Juice, to lighten it a bit. A go to Recipe, might make it today. x

Sounds delicious, Tina. My upside-down pear cake was similar - but the butter and brown sugar was brought to the boil, then poured into the tin, to line the bottom before adding the fruit to it.

Made these just now - they are still in the oven:

Only difference - no bananas (!!), but they are smelling a bit yummy ...
A bit extra of peanut butter; and of Greek yogurt - for making up a little from having no bananas; and I used half'n'half of plain and wholemeal flours.
Just looked in the oven - they are huge !!!

Morning all,
I made this, currently in the oven, as I had just one banana with a browning skin:

The recipe asks for an egg yolk, but I'd rather use the whole egg, so I doubled up all the ingredients, except just the one banana and a whole egg. I have used an 8" sandwich tin, lined with a cake paper. I left out the cinnamon, as I felt it wasn't needed - but I did drop some peanut butter drops on top for added flavour, hoping they'll sink a little.
I like the fact that these recipes are geared to 'small' - or one-person size. I did want to use the banana though.

Oh Chris, I forgot to say that I have used that website for small cakes again today. onedishkitchen.com/mini-pound-cake-recipe/ ... but I made it a chocolate one, and added a small packet of choc chips into the mix. Smells lovely.

The chocolate version turned out well - we both enjoyed a small piece with a cuppa, while it was still slightly warm - I know, couldn't resist !

I made a golden syrup cake again yesterday, so very naughty, but so very delicious (and easy)

- though I choose to 'cream' the butter and sugar, and I use all soft brown sugar, but otherwise everything else the same. (Some commenters said they found the mixture too runny, so I avoid that by doing the creaming method.)
Try it - and don't feel at all guilty ! After all, it is January, the month where having something like this makes one feel good!
