Unfortunately too much beating for me, but Daughter bought me this Weekend, Asda Raspberry Ripple Fudge, and it is delicious.

Going to make Russian Slice, not quite sure about the Recipe, but think it is a Pastry Base, Short Crust, Cake Crumbs, mixed with Lemon Juice, and Jam, and when cold, covered with Water Icing.

Still picking raspberries, and not keeping up with them, so I cooked this today: www.bbcgoodfood.com/recipes/raspberry-bakewell-cake - it is cooking at the moment - and Tina, it is a throw everything in the bowl and mix - super easy. I have laid some raspberries over half of it, but of course it could be any fruit, but it is looking good, although only half way through the cooking!

This cake is called SEA CAKE, as it was created by two Swedish ladies, Irene and Agnetha, to take on to their yacht on the Baltic Sea. Heat oven to 200 deg.C
175g butter, softened 200g soft brown sugar - Beat together till of a creamy consistency
3 eggs, separated - Beat egg yolks into butter/sugar mixture
175g plain chocolate, melted - Add to mixture.
100g plain flour 50g chopped hazelnuts 2.5 teaspoons of instant coffee, dissolved in a small amount of boiling water - Add flour, hazelnuts and coffee to the mixture. - Whisk the egg whites till stiff, and fold into the mixture - Pour mixture into lined 8" diameter tin. - Bake for approximately 30 minutes - the centre should still be soft and squishy, as it will continue cooking as it cools.

Sounds delicious Val, bit too much Work for me now, and it is also very rich, but would not say no to a thin Slice!

I have to be honest, Tina, I am not a great fan of very dark chocolate, but the rest of the family love it. With this cake, I like to taste a bit, but that's all - if I had my way, I think I'd use milk chocolate, but it may not work as well - not sure.
