Tonight's meal is a mystery ! But I think I will cook up a batch of beef mince, and decide later what it will turn into!

Though I no longer eat Beef Mince, it used to be the Base of many a Dish when the Children were small They all loved Plate Pie, except my youngest Boy, who refused to eat Meat of any sort, from an early Age.

Today, I shall see what the Tesco delivery brings, but I suspect it will be a chicken dinner this evening. Tina, the same happened in our house, as with three brothers with hollow legs, Mum used to make pies to make the meat go further. (With apple pies to follow often)

Yes, had three boys too, and one Girl who ate as much as they did.Iused to buy a Sack of Potatoes, and a Tray of Eggs, My Mother always said, if you have them you have a Meal. And Soup was always on the go. Cold Chicken, with Sprouts. Mash, Beetroot, my own, and the last of my Tomatoes. The Thought of going back to those tasteless Orange Balls from the Supermarket, makes me shudder.

Macaroni Cheese with Mash, that is how I like it, got used to that in the War Years, everything had added Potato, to bulk out the Meal. Ice Cream Roll, with fresh Raspberries.

Today we had the second half of home-made soup for lunch - very simple: 3 large onions, roughly chopped and cooked for 4 mins in the microwave with a knob of butter, till soft. 2 streaky rashers of bacon, chopped finely, and both stir fried for a couple of minutes with 1 potato also chopped up into small cubes. When they seemed cooked, (10 mins) I added a litre of stock, made with cubes and boiling water. Cooked for another 10 mins, and then whizzed with a stick whizzer, adding seasoning (no salt, as stock cubes have enough!), but pepper and a teaspoon of dried thyme. Brought to the boil again, stirring. Voila - a very tasty soup for lunch. Yesterday added some stir fried finely chopped baby leeks; and today added some chopped salami to the bowls.

Dinner today, is Thai Fish Cakes, and Salad, Dessert will be Apple Crumble and Custard. Got my Soup made, an enormous Potful, think Pressure Cooker almost to the Top, SIL thinks he is making it for them, far too much Veggies, especially Leek, and Onion. cooked it added Seasoning, not enough Flavour for Moi, so, added a Tin of Tomatoes, Tomato Puree, Garlic Powder, and Chilli Flakes, voila just fine! Got to cook more Apples for the Crumbles, then, start on Slices of Apple, for freezing, can't see me having much Leisure time today.

It'll be sausages for dinner tonight, not sure how I shall cook them, just yet anyway. I have just taken out of the oven a new recipe, not cooked before consisting of sliced apples (I used windfalls), and a sponge-type cake over the top. It is just like Eves pudding. This one is butter the dish, then sprinkle over that with sugar, then the apples (they are eaters, not cookers), then a sort of sponge recipe, but using oil, and whisking the eggs and sugar first, rather than beating butter and sugar. Quite different, but we have just had some with some cream poured over. Pretty yummy. Mmm, I think this should've been on the 'Cakes and Bakes' thread!

I love Eves Pudding Val, might make some of them as well as Crumbles for the Freezer.

We do, too, Tina, but this recipe was a little different, though I'm not sure if it made any difference to my regular recipe - which is a whole lot easier to remember. I shall take the remainder of this one to daughter's house today, and then I'll make another cake later - I'm thinking of a carrot cake (as I have plenty of carrots!). It'll be a leftover dinner this evening as I only used half of the sausages, so it may be a pasta using the chopped up sausages with a nice sauce.

Daughter did me some Potatoes while she was up, am having trouble peeling them, it takes me ages. So it will be left over Chicken, Mash, and Green Beans, followed by Toffee Apple Pie, and Ice Cream. I would love more fancy Meals, but cannot stand long enough now, so simple and quick is the Order of the Day.

Tina, there's absolutely nothing wrong with good old-fashioned meals - they do not need to be fancy to be good. Fancy meals are okay when entertaining, if we ever do (!), but regular nutritious meals are the order of the day in this house!
