Had the Chicken I did not cook yesterday, but it was tough, don't want to waste it, but not sure what to make with it. Know my Mum would make Rissoles with minced Meat leftover, but no Idea how to make them, have to look it up. So it was Chicken, Cauliflower, Peas, and Mash. with Chocolate, and Caramel Dessert.

When we were able to go shopping (seems ages ago!) we used to buy the big box of chicken wings, once baked then eaten a la Henry VIII, with the fingers! So I have ordered some in the delivery due today. I like them for two reasons, one is that it is a good talking/chatting type of meal, sometimes baked with a barbecue sauce. Second reason is that as there are so many bones, it makes a great stock, ready for a tasty soup.

Strictly speaking, this is not baking/cooking. Tina, you mentioned Lotus biscuits. When I found the recipe for the Double Decker cheesecake, the author, Jane, clearly loves cheesecakes, and I came across this one: www.janespatisserie.com/2015/05/01/no-bake-speculoos-cookie-butter-cheesecake/I have a pack of speculoos biscuits in the cupboard and wondered whether I could use them for a recipe, any sort. I saw this one in Jane's list of cheesecakes, so I ordered a jar of Biscoff (Lotus biscuit taste) plus some more Lotus biscuits. Our family also love cheesecakes, and this one is a no-bake type, so, as it is Bank Holiday this weekend, and we plan on meeting up with the family again, so I shall have the ingredients to make this one for the weekend.

Oh, Iris, it was good. I allow myself one portion, just to taste it. After everyone had a piece of it, portioned up and put in take-away containers for them to have at home.

Got some Haddock from the Fishmonger, and made some homemade Fish Fingers, for the Freezer. Had a couple for Lunch, they were so tasty. Cut them into Fishfingerish Shapes, dipped them into Flour, with added salt, pepper, and a couple of shakes of Aromat, lifts them into a whole new level. Have Mushroom Stir Fry for Tea, with Lemon Mousse.

Made a tomato based veg soup for lunch and it's breaded fish, oven chips, peas and roasted tomatoes for tonight. Fresh fruit for pud or yoghurt (or probably both in OH's case!)

I have just put on a soup comprising onions, leeks, carrots, mushrooms, and a pan full of chicken jellied stock. For lunch! (Last night we had chicken wings again, and after boiling up the bones, etc, have a wonderful stock.)

Decided to use the Stir fry, abhor waste, but will have a steamed Pudding, actually got some 'melt in the middle, Puddings, that Daughter, bought me at the Weekend, so that will fill me up, and provide the warmth.

OH requested cheese on toast for lunch so that's what we had. Tonight I'm making pork stroganoff with rice.

This evening it's a pizza - OH has, after many years, decided that he really likes pizzas !! Of course I add a whole lot on to it - this evening I put two sliced and softened onions, red sweet pepper, mushrooms, salami, and cheese on top.
