I thought we could come up with ideas to make the food we buy or grow go further, to eliminate waste, save money and time and create more meals/servings. The idea of the rubber chicken, for example.
When I'm cooking a mince dish now, I routinely add a couple of tablespoons of lentils or pearl barley, and lots of veg - we've had a couple of huge courgettes recently which I grated and added to a panful of mince, I often grate carrots into the mince too.
I read a blog recently where the author said she often buys one of the supermarket ready cooked chickens from the rotisserie counter. Instead of eating it as it is with roast veggies, she waits for it to cool and then strips off all the meat to use in other dishes. I thought this sounded a good idea but, rather than paying the premium for a ready cooked rotisserie chicken, I'd simply buy a raw chicken and cook it myself (ok, so i'm using fuel to cook it, but still reckon it's cheaper to cook it myself, especially if I've got other stuff in the oven at the same time). I'm sure I could get lots of meals out of all the meat stripped off the bones, plus using the bones for stock/soup of course, so that's what I'm going to do tomorrow, having bought a raw chicken last week.
So what are your ideas for stretching food?

Well, Today Sue, have leftover Chicken with Stuffing, half a Tin of Potatoes, and same of Sweetcorn. So, am going to chop Meat fine, cut up Potatoes, add the Sweetcorn, and a half a chopped Onion, handful of frozen Peas, Egg to bind, and Seasoning, have frozen Pastry, thawing, so will make several smaller Pies, One big Pie, no good for One Person.

Good use of roast dinner leftovers, Tina. If we have leftover gravy, I use that in the pie too.

Don't know why I said frozen Pastry, Su, as made my own, but still never got to make the Pie, youngest Son, came and stayed all Afternoon. Never thought of saving Gravy, but will now.

Keep all veg peelings and meat scraps in a bag or box in the freezer. When you have enough use to make soup. I do this with veg only for me then add meat bits to his! I strain off the veg peelings too. The chickens then get those. I use pearl barley and lentils too to pad out stews! Also various pulses I keep a stock of.

Made Potato Cakes, by using Mash left over from yesterday. Had a couple for Lunch, rest were frozen. Zizzed up half a Loaf of stale white Bread, and a couple of ends of Wholemeal, will use to make Nutburgers, and lighten steamed Puddings.

Love Pancakes made with Potato, never thought of grating with the Peel on, but the most Goodness is just under the Skin.

This is a very interesting idea. I always try to buy enough food for the whole week. It's not that difficult because I have a written menu. It saves money and time, and it's also easier to control what and how much we eat.

I wash my Potatoes before I peel them, then peel them quite thickly, and save the Peel in a Bag in the Freezer, till I have enough for a lovely Potato Snack. Put into a plastic Bag, with seasoning of your choice, with a bit of Oil. Give them a good Shuggle, then bake in a hot Oven, till crisp and yummy!

I wish some of our Chefs, would stick to good British Food, it was invented, sorry can't think of a different Word, we need it because of our Climate. I know Thai Food, and other eastern Food is delicious, feel we are losing our Food Culture, as well, as everything else. I don't eat Red Meat now, but does anything beat a Sunday Roast? Bring back Spotted Dick, that's what I say, good stick to yer Ribs Stuff! We sure need it today. Leftover fried in Butter, and liberally sprinkled with Sugar!
