Will start this off with my every day fruit cake adapted to a vegan recipe 8ozs SR flour 1 tsp mixed spice 4ozs butter / vegan butter 4 ozs soft brown sugar 8 ozs mixed dried fruit 12 glacé cherries 1 beaten egg with about 5 tblsp of milk or 1/2 cup chick pea flour with 1/2 cup vegan milk ( I use soy)
Rub fat into flour and spices. Mix in sugar Mix in dried fruit with cherries cut into 1/4's Add egg and milk / chick pea flour and vegan milk and mix well. Put into tin and bake in moderate oven about an hour. In the halogen this takes an hour on 150, in the Esse it takes an hour at whatever temperature it is running at although it would not be very hot, just hot!

I have a similar recipe for an everyday fruit cake, it's done in a saucepan and is simplicity itself.
120g butter or margarine 150g sugar (I use brown) 340g dried fruit 225ml water 1 tsp bicarb 1 tsp mixed spice
Put these in a large saucepan and bring to the boil, simmer & stir for a couple of minutes until the fat and sugar have dissolved. Let cool for a bit. Then add:-
2 eggs 240g SR flour (or plain flour with 2 tsp baking powder added, which is what I do)
Mix well together, then pour into a lined round or oblong cake tin. Bake in a medium hot oven for about 1 1/4 hours, give or take, until done.

I have 'adjusted' the Fruit Cake Recipe, you gave me, Aly, to my Taste, I melt the Butter, and add to Ingredients. I also add a Dessertspoonful of Golden Syrup. At the Moment, am studying how to preserve Fruit in the Microwave. Have done a couple of Jars of Cucumber, but waiting for them to 'age' a bit.

You really need to buy the Book, Aly, as everything has a different Time, and as I have not tested it yet, I was giving it a few Days to mature, will test it Lunchtime. But what I did was make a Syrup of half Water to half Vinigar, sterilized Jars, filled Jars with Cucumber, and a few Slices of Orange Pepper, used ordinary Jam Jars, placed Lids on, but did not tighten them, cooked One Jar at a Time, on medium high for three Minutes. Very , very hot, Screw down Lids, this bit is messy. Turn upside down for about an Hour to see if they are sealed, you should hear a Pop, this is the sealing bit. As I am only learning myself, cannot be more helpful. will come back later and give you the name of Book, Family have arrived.

Had a quilting pot-luck lunch yesterday. I made a hazelnut meringue sandwiched with creme fraiche and raspberries picked from the garden. Delish!

That sounds gorgeous, Val. I've never made meringues - well, not since school when the ones I made were a total disaster! And Steve doesn't like them anyway, so I never bother.

Sue, I made it on Thursday evening for the Friday lunch - and assembled it then (not the best idea!) - but, as it transpired, it was actually rather nice having been moistened by the creme fraiche (and had sunk somewhat!). There wasn't any left to bring home though... :-)

Going to make a Scotch Egg pie - pastry base covered with sausagemeat, whole hard boiled eggs in a circle, covered with the rest of the sausagemeat. A topping of mixed breadcrumbs, grated Parmesan and parsley.
Will take a couple of wedges for our picnic tomorrow, along with a bowl of mixed salad.

Sounds yum, Sue. I used Aly's fruit cake recipe day before yesterday but added a tablespoon of golden syrup as Tina suggested in her post for a similar cake. In fact I doubled up the mixture and made two loaves (1 for us and 1 for the poorly neighbours). Had compliments from OH and the neighbours. Thank you ladies for sharing the recipes.

Disaster struck here, and no wonder, forgot it was SR Flour, and added more Baking Powder! What a silly billy, Cake has sunk right down in the Middle, looks okay, so going to have the end with a Cuppa, any Minute !
