Oh, thanks for that, Tina, I don't have cake mixes, so do you think a 2-egg sponge mix would suffice? Plus, can I cook it in a conventional oven? Thoughts?

The whole Idea Val, is to save young, and ahem, not so young, Time, so if you are going to make a Sponge, it defeats the purpose. Buy a Packet of cheap Mix, when next you shop. There is no Egg in it.x

Think it would be a disaster in a conventional Oven, no Eggs!

That sounds really easy, Tina. What size slow cooker do you have? Do you put the mix in the bottom of the cooker or into a tin/pyrex dish? Have never used a cake mix. Is 16oz the weight specified on the packet? Will have to look when I next go shopping.

I have two Slo Cookers, Iris, I use them a lot, one is normal Size, one is bigger, and will hold a Chicken. Put your Fruit in the bottom of the Cooker, then spread your Cake Mix over it, and lastly dot with small pieces of Butter. I only use half the Mix, and half the Tin of Fruit, and that gives two good helpings, but I am a small eater. If in doubt, look up Peach Dump Cake, loads of Recipes will come up for it.

Do either of you know how to make Gypsy Tart? It involves a Pastry Case, with a whipped up mixture of soft Brown Sugar, and Cream, I think.

Thank you both, have checked both Recipes out, and might try the Twenty Minute Baking One, ten Minutes does not sound enough cooking, even on a hot Sheet, and have read, previous Bakers saying it was still runny, don't want to waste a large tin of Evap, especially now.

I'm getting tired of writing out recipes I want to try, but here are a few more added to them. I love all things garden, but I also understand that it's not good for my health.

I have just taken this out of the oven: www.sweetestmenu.com/butter-cake/It looks good and I have made the vanilla icing to go with it, but have to wait for it to cook down first! It rose well and stayed risen (always a bonus ! so looking forward to testing/tasting it

Going to test this today, Val. Looked it up, and it is just a basic Sponge, but made differently. I usually give my Sponges 35 Minutes, and use the all in One Method, but will try this, and 30 Minutes, if it appears done, of course, even if it goes wrong, which I don't think it will, you can use Sponge, for lots of things, always handy.

Tina, having now tried it, would give it five stars - yes, you're right, very similar to Victoria sandwich - but in one tin, and also I made the icing but when we had our coffee, the cake was still warm, so spooned over a little icing on each portion. Later on, spread the icing and added some chocolate shavings, but it was, and is, delicious. My hand mixer has given up, so I used a processor, so turning out well was a bit of a surprise !! To get the butter and sugar nice'n'creamy I no longer have the strength in my hands, so I needed some assistance. Good luck with yours Tina, x
