My special Fruit Loaf,
8 OZS SR FLOUR 4 OZS BROWN SUGAR 8 OZS MIXED FRUIT 1 EGG LEVEL TEASPOON MIXED SPICE ROUNDED DESSERTSPOONFUL OF GOLDEN SYRUP METHOD
SOAK FRUIT IN HOT TEA A FEW MINUTES MIX ALL OTHER INGREDIENTS IN BOWL EXCEPT EGG, THEN ADD FRUIT, AND A LITTLE LIQUID, PLUS EGG, USE AS MUCH OF THE TEA, AS IT TAKES TO MAKE A LOOSE MIXTURE, AND FINALLY YOUR SYRUP, MIX WELL, THE SYRUP IS THE SECRET INGREDIENT THAT MAKES IT LUSH. BAKE AT 350 FOR ONE HOUR.

DUTCH LEMON BISCUITS.
8 OZ PLAIN FLOUR 6 OZ BUTTER 4 OZ CASTOR SUGAR 1 LEMON, HALF JUICE, ALL RIND, GRATED. PRESERVING SUGAR, TO COAT I DID NOT HAVE ANY, USED GRANULATED. METHOD. CREAM FAT AND SUGAR, ADD LEMON JUICE AND GRATED RIND STIR IN FLOUR, MAKE INTO A SAUSAGE SHAPE ROLL, COAT ROLLS IN SUGAR PUT INTO FRIDGE TO HARDEN UP. WHEN READY CUT INTO SLICES ABOUT QUARTER OF AN INCH THICK. WITH A VERY SHARP KNIFE. BAKE AT375 FOR 20 MINUTES OR TILL GOLDEN BROWN.

COCONUT BISCUITS. 4 OZ BUTTER 3 OZ PLAIN FLOUR 1 OZ CORNFLOUR 1 OZ ICING SUGAR 2 OZ DESSICATED COCONUT METHOD MIX BUTTER WITH ICING SUGAR, WORK IN EVERYTHING ELSE, ROLL INTO SMALL BALLS, FLATTEN SLIGHTLY, PUT ON BAKING TRAY, AND BAKE AT 350, FOR 15 TO 20 MINUTES.

IRISH SODA BREAD.
6 OZS WHOLEMEAL FLOUR 6 OZS ANY WHITE FLOUR HALF TEASPOON SALT HALF TEASPOON BICARBONATE OF SODA HALF TEASPOON SUGAR HALF PINT BUTTERMILK OR MILK SOURED WITH LEMON. METHOD
PREHEAT OVEN TO 400 MIX ALL DRY INGREDIENTS TOGETHER, ADD MILK, TURN ON TO FLOURED BOARD KNEAD, BRIEFLY. SHAPE INTO A ROUND CUT A CROSS IN THE MIDDLE, TO LET THE FAIRIES OUT, MY MUM USED TO SAY, THOUGH WHAT THEY WERE DOING IN THERE IN THE FIRST PLACE? BAKE 30 MINUTES, AT 400 SHOULD MAKE A HOLLOW SOUND WHEN TAPPED ON THE BOTTOM.

CREAM BUTTER AND SUGAR SIEVE IN THE OTHER INGREDIENTS, MIX WELL, AND PLACE MOUNDS ON BAKING TRAY, AND FLATTEN BAKE AT 350, 10-12 MINUTES.

On Friday morning I baked a carrot cake to take to our quilting group, but unfortunately every morsel disappeared, so when I came back home, I had to make another, as it's our go-to favourite cake.

FORK BISCUITS 4 OZ BUTTER 2 OZ CASTOR SUGAR 5 OZ SR FLOUR VANILLA ESSENCE METHOD SOFTEN BUTTER, ADD CASTOR SUGAR BEAT WELL.ADD VANILLA, IF LIKED. ADD FLOUR GRADUALLY, AND ROLL INTO WALNUT SIZED BALLS. PUT BALLS ON BAKING TRAY AND FLATTEN A BIT, WITH A FORK DIPPED IN WATER. BAKE AT 350 FOR 15 TO 20 MINUTES OR UNTIL PALE GOLDEN. IF YOU WISH YOU CAN DIP THE ENDS IN CHOCOLATE.

LEMON DRIZZLE TRAYBAKE. 8 OZS SOFTENED BUTTER 8 OZS CASTOR SUGAR 10 SR FLOUR 2 TEASPS BAKING POWDER 4 EGGS FINELY GRATED RIND OF 2 LEMONS 4 TBLS MILK TOPPING, 6 OZS GRANULATED SUGAR JUICE OF 2 LEMONS. HEAT OVEN TO 325-350 LINE TRATBAKE TIN AND GREASE WITH BUTTER. PUT ALL INGREDIENTS IN MIXING BOWL, AND BEAT FOR TWO MINUTES. POUR MIX INTO TIN, AND BAKE FOR 25-30 MINUTES, OR TILL DONE, PRESS LIGHTLY IN THE MIDDLE, IF IT SPRINGS BACK IT IS DONE. ALLOW CAKE TO COOL A BIT, THEN MIX LEMON JUICE AND SUGAR AND POUR EVENLY OVER THE CAKE. ALLOW TO GET COLD, BEFORE CUTTING INTO SQUARES.

PLACE DESSERTSPOONFULS ON OVEN TRAY WITH SPACE TO SPREAD, BAKE AT 360 OR THERABOUTS,DEPENDING ON YOUR OVEN, AS THEY VARY. WHEN COLD, SANDWICH TOGETHER WITH BUTTERCREAM, AND JAM.

Okay Tina, you said you're building up a file for recipes. This one is really good, and very light. It's Mary Berry's carrot and banana cake, but made with oil, not butter. www.dailymail.co.uk/home/you/article-3428485/Mary-Berry-Foolproof-Cooking-one-Carrot-banana-cake.htmlI've had not so good experiences working with oil, so I was a little reluctant to try, but my niece told me that it's a good one - and quick to make. It rises so well, that I used each half as a cake on its own. The cream cheese frosting though, according to her recipe is far too much, so I made up my own with softened butter, some mascarpone (or cream cheese) plus icing sugar until it felt right - and not too much either! The plus is that the cake is made in one bowl, and easily. Hope it works for you! Vx

The Idea, Val, is to write the Recipes down on here, so anyone can access them any Time. When you can spare the Time, maybe you could do that, not just me. If you find a Recipe you think is really yummy, or super easy. I thought if we did this, it might attract more People to join

Banana Cake 4oz butter 5oz castor sugar 2 eggs 2 large bananas mashed 1/4 cup warm milk ( sorry do not have imperial measurement) 1 tsp bicarbonate of soda 8 ozs self raising flour
Line a deep 8" tin with grease proof paper. Cream butter and sugar until light and fluffy. Add beaten eggs gradually beating well after each addition. Beat in mashed bananas. Combine warm milk and bicarbonate of soda and add to mixture. Stir in flour. Put into prepared tin and bake in a moderate oven for 40-45 minutes. I put Vienna icing on once cooled 8ozs icing sugar 4ozs butter 1 tablespoon sherry ( I use Harvey's Bristol Cream) 4-5 drops vanilla essence Beat all together and spread over the cake. I put most on top and let it drip down the sides a bit.

METHOD SET OVEN TO 350 CHOP APPLES RUB BUTTER INTO FLOUR AND SUGAR ADD APPLE AND EGGS AND ENOUGH MILK TO MAKE A STIFF ROCKY MIXTURE, PUT IN GREASED, AND LINED TRAYBAKE TIN AND BAKE FOR 45 MINUTES. WHILE STILL HOT, COVER GENEROUSLY WITH SUGAR. CAN BE EATEN HOT OR COLD.

PEACH DUMP CAKE 14 OZ TIN OF SLICED PEACHES, DRATNED 14 OZ YELLOW CAKE MIX 4 OZ BUTTER CUBED SMALL METHOD DRAIN PEACHES, PUT CAKE MIX ON TOP, IN SLOW COOKER SCATTER THE SMALL CUBES OF BUTTER ALL OVER COOK FOR TWO HOURS ON HIGH, OR FOUR ON LOW. SERVE WITH CREAM, CUSTARD, OR ICE CREAM.
