Have this Recipe, Val, written in my old Book, was going to make a Fruit Cake tomorrow, for the Weekend, but might make this instead. I will use an extra Oz of Butter, like my Cakes to last a bit longer, and will add some ground Almonds too.

Also made a carrot cake, recipe from the Guardian: www.theguardian.com/lifeandstyle/wordofmouth/2012/mar/15/how-to-cook-perfect-carrot-cakeI noticed that a large number of recipes for carrot cake use oil rather than butter - I prefer butter, so having found this from the Guardian suited just right. I added sultanas, and cranberries (cranberries are good for us girls..!) It is still cooling, so haven't tried it (it's for tomorrow anyway). The almond cake I cooked earlier looks lovely - so we'll see what that tastes like tomorrow too.

The raspberry bakewell recipe looks delish, Val. I usually stick to my old time carrot cake recipe which uses oil. I like the moist cake it produces which lasts well (not if the family are around!).

Ihate Oil, so melt my Butter. am going to make for a change, bloomimg eck, have forgotten, but Pastry Base Tarts, with melted Butter, Soft brown Sugar, Sultanas, and Eggs, think they might be Border Tarts.

Each to their own, Tina! Today I am making Yorkshire puddings (to freeze for Christmas), a batch of rock cakes, and also individual and a couple of larger mincepies to freeze. Tonight I'm cooking breaded fish and oven chips so will put the Yorkies and rock cakes in while the oven is on. Haven't made pastry in a very long time but have tried a family recipe passed to me by my DiL. Her father makes literally hundreds of mincepies to take to his whist clubs meetings where they go down a storm. The recipe includes whisky in the pastry!

Ooh, Iris, that sounds like the recipe should be shared ... I'm good at making bread (warm hands) so I'm hopeless at making pastry (cold hands needed)... so I would appreciate any help I can get! Sounds like you're going to be busy again, Iris!

Well here's the recipe for mincepie pastry : 8oz SR flour 3oz Trex 1oz butter 1 tbspn caster sugar 1 large egg yolk 2 tbspn whisky/water/lemon juice/orange juice mincemeat Mix flour and sugar and rub in the fat until breadcrumb consistency. Beat egg yolk and liquid of choice and add to flour mix. Bring all together and add a little more liquid if required. (The recipe says you can use a food processor so your warm hands won't matter, Val). It is a very crumbly pastry mix so press gently together into a ball. Roll out to 2mm to 3mm thick then cut to your preferred size. The pastry tears/cracks so is a bit fiddly but repairs well! My kitchen was quite cool yesterday and I had cold hands so I didn't have too much difficulty . I'm not keen on Trex but it does make a very short pastry. I suppose you could use lard instead. At the last count I'm only cooking for 7 this Christmas. DiL has to work over Christmas so the far-flung part of the family will arrive here on 28th December and return home on 2nd January. I'm trying to plan ahead and prepare and freeze as much as possible so I don't end up doing everything at the last minute. I don't like spending too much time in the kitchen when the family is staying here - I'd rather be making the most of their company.

Cooking ahead, I make my sausage rolls but freeze them uncooked, as it won't take much to paint them with egg and put them in the oven, more tasty that way. I have frozen mine in long rolls, so I will have to cut them too, but it saves time, plus space in the freezer.
OH loves Dundee cake for Christmas, but when we have Christmas cake and mince pies, I feel it's just too much - in carbs!
I have bought and prepped the Brussels sprouts as at the moment, they are sweet little ones being sold, and the grandchildren are more likely to eat them. They are now in the freezer. At the same time I bought four small purple-y kale, and I have chopped and frozen them - all ready to steam when needed.

Iris, I bought some Trex when we went shopping, so I can make it now! I took my ginger spice cake to quilting this morning, and it was a hit, it has become more 'sticky' today, so very like parkin. A winning recipe, and adding sultanas was a good idea as it turned out.

A friend said that she didn't like carrot cake (who doesn't like carrot cake??), then she admitted it was probably because she'd never tasted it!! So this morning, as we were almost out of cake, I thought I'd do a double mix - one for us and another for her. She also loves lemon curd, which I'd saved to give to her as a small gift. She was still here when lunch came around, so invited her to stay for lunch (home-made soup), and OH had been out and bought some gorgeous crusty bread, so that was our lunch today, and she went home with her warm carrot cake, a jar of lemon curd, and half a crusty loaf to enjoy with her lemon curd. One happy bunny went home with her arms full!

When my Neighbour, many Years ago, offered me a Slice of Carrot Cake, my Answer was no Thanks, she said to just try a bit, and of course I was hooked. Going to finally make my Xmas Cake, not a real One, can't deal with all the richness now, so it will just be an upmarket Version, of my usual Fruit Cake, marzipaned and iced, half an Inch of Marzipan, and a smear of Icing.
