My jam stock is getting low but lots of fruit in the freezer. Need to stock up on sugar and get cooking. Have to start thinking about running down both freezers.

Likewise, Aly, I need more sugar, too. Amazing how much we can use when making jam!
I also need to make some more marmalade, as I save all my citrus skins and cut them into shreds ready for making marmalade and then freeze them - now my bag in the freezer is overflowing, but of course have to wait for more sugar, again! I also have some satsumas which will help with the marmalade.

Tina, I have made pickles in the past, but not recently, but I found this website, and the process is quite simple, so wondered if this one may work for you:
www.thekitchn.com/how-to-quick-pickle-any-vegetable-233882
I must say, that while reading it, I wondered whether I could do the same, but she stresses to use fresh vegetables, and I don't have access to the garden-fresh veg that you have, only supermarket veg, so not that fresh!
Good luck.

That Recipe looks really simple Val, and the Peach One sounds really tasty, might have a go when all this Fruit is sorted.

6 jars of raspberry jam cooling. Have started emptying out the chest freezer ready for moving house. Plum, peach, cherry and black currant still to do. Will pick up a good supply of sugar when I shop tomorrow. It will be good to refill the pantry shelves again.

Neither have I Tina, but Christina reckons it is just delicious. I'm not going to turn down a challenge like that! So, as soon as I have enough to follow her instructions, I shall try it!
