Vegetarian Sausage Rolls.
8 OZS MUSHROOMS 2 QZ WALNUTS CHOPPED FINE 2 OZS WHOLEMEAL BREADCRUMBS 1 EGG PUFF PASTRY METHOD FRY MUSHROOMS AND ONION OVER A LOW HEAT TRANSFER TO BOWL, AND MIX IN BREADCRUMBS,WALNUTS, AND ENOUGH EGG TO BIND, SEASON TO TASTE. LEAVE TO GET COLD. THEN JUST USE AS YOU WOULD SAUSAGEMEAT WITH THE PUFF PASTRY, CUT INTO PIECES, AND BAKE AT 425 FOR TEN MINUTES, OR TILL COOKED. THEY ARE LOVELY.

I saw a courgette recipe by Yotam Ottolenghi in the paper over the weekend, it was a sort of veggie shepherds pie.
It's basically courgettes sliced and slowly fried in oil over a low heat for 20 minutes or so, until they're very soft. Think he may have added garlic too, I can't remember. He then seasoned the courgettes and added herbs, tipping them into an oven dish. He topped them with cheesy mashed potato, scattered over some walnuts quickly cooked in butter and baked it.
Sounds quite nice, although I think I'd add red onion and bacon to the courgettes (but then it wouldn't be vegetarian, of course!).

That sounds very tasty Sue, you could use the main Recipe as a Base, am always tweaking Recipes.

I use a lot of passata as a base for meals. Some I make from my tomatoes but usually have to buy it as well. I am now finding veggie burgers, nuggets and mince everywhere. Really great to see. Still very little for vegan so tend to mainly eat vegetarian!

Most Recipes you can use the Veggie Substitute, am not very keen on the Mince, but use the Burgers, and Chunks a lot And the Hot Dogs are the best.

Got Mushrooms, out of Date today, so going to cut the outsides off and fry, ready to mix with Walnuts, as filling for Sausage Rolls, so much Pastry in the Freezer to use as well. The Mushroom Cores, though tough, will go in the Stockpot. lovely flavor.

Aly, my nephew will be visiting tomorrow with his 13-yr-old daughter, and they are vegetarian.
I have bought some veggie sausages - any ideas what I can do with them for a tasty meal. I'll also make an apple crumble for them, as he does love his puddings, but it's the main meal that I'm unsure of!!

Val, just use the Sausages as you would any ordinary Meat Ones. Gravy, will be the thing to watch, but sure you can buy that.

Sorry I did not see your post Iris. Yes, use as normal sausages with whatever veg you are planning. Also makes a good casserole but do not add quorn too ear,ynas it goes very soft.

Aly, it was me who asked about the sausages, but, as it turned out, I received a message from nephew which unfortunately had predictive text all over it, which meant that I misunderstood (thought he was saying he'd decided he was too tired to call in, or something like that) so I just put them in the oven to bake them. Then he and family arrived .... all very unplanned. So I boxed up all twelve sausages and they were taken home with them (to Cardiff). I received a text about an hour later to say all the sausages had gone!!

That is good. Had some Linda McCartney ones last night and enjoyed them more that the quorn ones which is good as the new English shop sells them! Found a recipe for vegan creme brûlée which I will try before posting the recipe.

Scrambled Tofu. Soft or firm tofu drained and pressed thinly sliced Vegan butter 2 1/2 teasp season mix Melt butter in frying pan stir in season mix put in tofu and stir until it is coated and broken up like scrambled egg. Season mix 1/2 cup nutritional yeast, 4 teasp onion powder, 4 teasp black salt (kala namak ) , 2 teasp paprika, 2 teasp turmeric. Mix together and store in a jar. This is my favourite breakfast

I've just discovered a new and delicious vegetarian pasta sauce, completely by accident! It may be vegan too, I know nothing about veganism, sorry.
One of our courgettes had grown to marrow size, I decided to cook it for the dog as she likes cooked veg mixed in with her meat or fish. I chopped it up, skin and all, added a glug of rapeseed oil (am sure olive oil would taste even better) and some chopped parsley, gave it all a good mix and put it in the microwave. Cooked it until the marrow was really soft, then I used my stick blender to whizz it all up. It turned into the most creamy and silky looking sauce - I tasted a bit and it's delicious, would be even better with salt & pepper added but of course I don't give those to the dog. It would be lovely as a pasta sauce with chopped onion added, and a sprinkle of grated cheese.
Just to add....Betty really likes it too!

That sounds good, Sue, and wonder whether it could work with other veggies - whizzed-up cooked carrots or tomatoes maybe, perhaps as a pizza base?
